January Cookies and More at Gideon’s Bakehouse
Gideon’s Bakehouse in Disney Springs has a new menu for January 2026 featuring a new cookie and cake slice and a returning cold brew. This month, the Banana Box Pie Cookie and Banana Moonpie Cake are new on the menu. The Banana Nitro Cold Brew returns to round out the banana trifecta. January also features a new series, the Morsels, featuring the Morsels Gideon’s Gargoyle on the monthly menu, a ringer t-shirt, and pin. Mid-month there will be more announcements for the anniversary including a second menu design. We will update here throughout January with more delicious news. January Cookies & Cold Brew
Banana Box Pie Cookie (NEW) — Cookie with flavors of banana, toffee, and spices topped with white chocolate and crunchy candied vanilla wafers with a hint of brandy and rum (Available daily in January at the Disney Springs and East End Market locations; limit of 2 per person, subject to availability)
Banana Nitro Cold Brew — Made with real banana (Daily in January at the Disney Springs location, subject to availability)

January Cake Slices
This month features a new cake - the Banana Moonpie Cake- available on Wednesdays and Saturdays at both locations!
Banana Moonpie Cake — Roasted banana cake layered with graham cracker marshmallow buttercream, crispy vanilla wafers, and mini marshmallows and topped with half of a mini moon pie (Limit of 2 slices per person, while supplies last)

January Merchandise
January merchandise features a new line for Gideon’s, the Morsels! The first Morsel is the Gideon’s Gargoyle and is featured on a ringer t-shirt, pin, and the monthly menu.
